A washed lot from El Mirador in the Perijá region of Colombia, produced by Antonio "Toño" María. The farm sits between 1,600 and 1,700 masl and grows Castillo, Colombia and Cenicafé varieties. Toño runs a tight harvest - pickers are paid a premium of 100 pesos per kilo for selecting only fully ripe cherry, and from there the coffee goes through a double fermentation. Cherries ferment for around 12 hours before pulping, then the beans sit for a further 24 hours to break down the remaining mucilage. Drying is done traditionally on patios at Toño's home in the village of Media Luna, spread in thin layers and turned regularly.

What to expect in the cup: A Medium bodied coffee with notes of green apple and orange, giving it a crisp juicy acidity. As it cools softer milk chocolate and lemongrass tones come thorugh adding sweetness and a light citrus finish.
